Gluten and Dairy Free Pancakes

This is the easiest and healthiest way to make morning pancakes. The aromas and flavors of banana when paired with Ripe Raspberry back tea, will make an unforgettable start to the day.

 

Ingredients 

1 cup oat flour

2 tablespoons coconut sugar

1 teaspoon baking powder

Pinch of salt

1 egg

1 cup almond milk

1 tablespoon olive oil

Vegan salted butter

1 banana

Organic maple syrup to taste

 

 

Combine oat flour, sugar, baking powder, and salt in a medium bowl.  Whisk together an egg, almond milk, and olive oil in a different bowl. Incorporate the dry ingredient mixture with wet ingredients. Peel a banana and mash it with a fork making a puree. Add to the batter and mix. 

 

You can use any pan to cook these pancakes. I recommend using vegan salted butter for frying. Place a tablespoon of batter into the hot pan on low-medium heat, wait for 10 seconds, and add another 1/2 tablespoon on top of the pancake. Repeat this process for the other pancakes. Flip each when you see bubbles forming on the surface. Enjoy with maple syrup and raspberry black tea.
