Ingredients
1/2 oz Brie cheese
0.3 oz Comte Cheese
0.3 oz Red Leicester cheese
1/2 oz unsalted butter
1 0.8-inch slice of sourdough bread
Cut a sourdough slice in half and butter one side of each half. The buttered side becomes the outside of the sandwich. Using a knife, spread brie cheese over the unbuttered slice of the sourdough. Thinly slice Comte and Red Leicester cheeses, placing slices on top of the Brie. Place the other piece of sourdough over the cheese, unbuttered side touching the cheese.
Place the sandwich into a non-stick or stainless steel pan on low heat. Fry each side for 3 minutes and then cover the pan with a lid for 1 minute, allowing the cheese to melt completely between the two bread slices. Remove the lid and turn off the heat. Allow the grilled sandwich to rest in the pan for 1 minute. This will dry the grilled bread of any excess moisture. Served with Assam black tea for the best grilled cheese ever.
